Brown Rice and Broccoli Patties


These patties are so tasty and although it seems like a lot of prep work they are totally worth it. Most of us are self quarantined so look at making these as something to do and they're healthy too!

There's a lot of variations for this recipe and if you omit the cheddar cheese and eggs they're a perfect vegan meal

What you will need to make brown rice and broccoli patties

Brown rice
Broccoli- fresh or frozen
Small onion
Garlic - 2 cloves
Bread crumbs- about 1 1/2 cups
Salt and pepper to taste
Cheddar cheese- shredded about 2 cups- optional
2 eggs. Or 2 tablespoons flaxseed ground dissolved in water

First cook the rice until tender. I cook my rice in homemade vegetable broth to give it more flavor. I cook 1 cup dry rice

While rice is cooking chop broccoli (fresh - 1 medium head or frozen 1 bag of florets), small onion and garlic

To make it easier chop in a food processor.

Drain rice and add to a large mixing bowl along with chopped vegetables,bread crumbs and cheese.

Stir together and then season with salt and pepper.

Stir in beaten eggs or flaxseed eggs.

Next line a baking sheet with parchment paper and drizzle some olive oil on it

Scoop up mixture and form into a large meatball size and flatten out into a patty trying to make each patty an even thickness. Place patty onto pan.


Bake these in a 400 degree oven for about 20 minutes turning once.

The husband likes these with low sodium soy sauce

Personally I think they're perfect as is. Again for vegans just omit the cheese or use a substitute.
