Easy Tasty Side Dish


Going to the grocery store can be depressing so learning how to make use of everything you have at home is important. There is nothing worse than having to throw away something because it got lost in the back of the refrigerator.

With a vegetarian in the house and a die-hard meat lover, making dinner can be a challenge.

I came up with this tasty side dish that can also be a main dish.

It is easy to do and the flavor was unbelievable.

Here's my recipe for my veggie packed side/main dish.

2 large red potatoes, washed and cut into small cubes

2 slices of red onion, chopped

1 clove of garlic, chopped

2 medium carrots, peeled and sliced diagonally

2 large handfuls fresh green beans, washed and cut in half

1 tablespoon extra virgin olive oil

1 1/2 cups organic vegetable or chicken broth ( of course use vegetable for non-meat eaters)


In a large deep frying pan or wok, saute the potatoes, onion and garlic. I allowed to cook until the potatoes were getting crisp - about 20 minutes.

I then added 2 tablespoons chopped fresh parsley and 1 teaspoon paprika.

Add the carrots and green beans and pour in the broth. Simmer until the liquid cooks down.

Your potatoes will be softened but not mushy. The flavor is amazing and it is ready to serve!!!
