The Best Potatoes EVER!!!!

My son knows his way around the kitchen. Like his mom, he seems to really enjoy creating new recipes and experimenting with flavors. Like mom, fresh is best and he makes sure to purchase fresh quality ingredients for his delicious meals.


A favorite of mine is his potatoes. Now, he stumbled upon this creation a while ago and we request it often. Measures are approximate (good cooks eye everything) and honestly, you can adjust the ingredients to your own particular tastes.

Here are the ingredients:
About 6 medium red potatoes (scrubbed, cubed with skins on!)
1 medium red onion, peeled and chopped
4 or 5 fresh basil leaves chopped coarsely
1 tablespoon fresh chopped parsley
1 tablespoon fresh minced garlic
1 teaspoon Hungarian paprika
1/2 teaspoon chili powder
salt and pepper to taste
about 4 tablespoons olive oil

Using a deep frying pan, slowly heat the oil. Pile all the ingredients in the pan.

let me tell you, this smells fabulous when it is cooking. Adjust the olive oil so there is plenty to keep the potatoes from sticking but not so much that it is swimming in oil. Cook over medium heat for about 30 minutes. We like the potatoes crisp but if you prefer them less crisp, serve sooner.

I am not a potato "person" but I cannot resist these. We use these potatoes in a breakfast wrap with thick sliced bacon and eggs and wow, it is so good!!!

My son the grill master also does these potatoes on the grill. Just use a heavy duty pan directly on your grill, use a spatula to turn the potatoes occasionally and depending on the heat of your grill, they will take about 45 to 60 minutes to cook to perfection. YUMMMMMMM!
