Provolone stuffed meatballs is a recipe that puts a new twist on the idea of meatballs parmigiana. Instead of topping a meatball with cheese, the cheese is inside the meatball. Yummmmmmmyyyyyy!!!!
You can use your own family meatball recipe and skip to the part where you add the cheese or you can follow my meatball recipe.
You may have some "leakage" with this recipe if either your cheese cubes are too large or you fail to stuff them into the inside of the meatball. It doesn't matter, it still tastes great. Serve these with pasta or make them into a meatball sandwich- your choice!
Here are the ingredients for Provolone stuffed meatballs by Momma Vicky
1 1/2 lbs. lean ground beef
8 oz. cubed provolone (1/4 " cubes)
3/4 cup bread crumbs
2 cloves minced garlic
1 small onion chopped fine
1 T freshly chopped parsley
salt and pepper to taste
1 t basil (dried) if you prefer (and have) fresh, chop about 4 or 5 leaves
1/2 t paprika
1 egg
1/2 cup milk
In a mixing bowl, combine all ingredients except for the cheese. Be mindful to mix ingredients well but do not overmix.
Roll meatballs to your desired size.
Take meatballs, one at a time and push a cube of cheese into the center. Re-shape the meatball and place on a baking sheet.
Bake in a preheated 375 degree oven. Gently turn and loosen after about 10 minutes and remove from oven when they are browned all around and appear cooked- depending on the size of the meatballs this can take from 20 to 45 minutes total baking time.
Remove to a warm serving bowl and either cover with your favorite marinara sauce or use for sandwiches.
Yum. Break open a meatball and watch the warm, gooey Provolone cheese pour out. Delicious!
If you absolutely do not like the taste of Provolone, you can use Mozzarella or Monterey Jack cheese instead. Make it totally non-Italian by using cubes of Cheddar. Just beware that some Cheddar cheese is oilier and may not be as appetizing. This is why I use a lean ground beef.
